'Heritage' turkeys bring back full-flavored birds
US - Long after the Pilgrims landed but way before Butterball was invented, turkeys were big and meaty, domesticated but full of flavor. These were the turkeys of two centuries ago, when farmers practiced serious animal husbandry but not factory farming. Back when animals were selected for their beauty, their flavor, and even, yes, for their intelligence, and not for their Mr. Universe breast.
